Yummy Baked Penne

Today in the Cooking Teens oven we feature a delicious recipe combining penne or ziti with spinach, mozzarella and sun-dried tomatoes. If you want to deepen the flavor ever further, use smoked mozzarella instead of regular. Put the water on to boil and then start the sauce and your pasta and sauce will be ready at the same time. Enjoy!

Shrimp Jambalaya

Today we’re offering up this yummy and easy version of a jambalaya. Typically, jambalaya includes a chicken, andouille sausage and shrimp or crawfish combo, but to make it simpler we found one that sticks with just shrimp. It tastes great and cooks up in a jiffy. (Note, spritzing the pan with any brand of cooking spray will do. And if you don’t have quick cooking rice, which the recipe calls for, use the regular kind. But increase your liquid to two cups of water for a cup of rice. And if you have any chicken broth around the house, substitute it for water, to deepen the flavor.)

Spicy Garlicky Shrimp

In the mood for shrimp? This shrimp stir-fry recipe for one person cooks up in less than 15 minutes flat. It’s spicy and yummy and simple to make. We think it tastes great over rice, with some chopped peanuts thrown in for a nice crunch.

Easy Vegetarian Chili

Happy Meatless Monday! Today in the Cooking Teens oven we’re serving up a yummy veggie chili that cooks up in a flash and is prepared with stuff you probably have in the pantry. No red peppers? No kidney beans? No worries. Feel free to chop up a zucchini or toss in your garbanzos instead. The recipe – easy and tasty and from AllRecipes – is very forgiving.
