Asparagus Frittata
Monday, February 6th, 2012Happy Meatless Monday! Today’s recipe features our favorite green spears, asparagus. They cook up in a flash and, when paired with eggs and gruyere, become a gooey, tasty dinner. Be sure that your frying pan in safe for the oven, otherwise, cook the whole thing on the stovetop, covering the pan after you add the cheese.
Spicy Chicken Chili
Friday, February 3rd, 2012Here’s a yummy, hot ‘n’ spicy dish that’s perfect for the Super Bowl. Spicy chicken chili takes only about 10 minutes of prep and five minutes of hands-on cooking. The rest of the time you can sit back and chill or watch the pre-game festivities while the spicy goodness simmers up a sumptuous supper.
Chicken with Banana Curry
Wednesday, February 1st, 2012We thought we’d feature a fantastic fruit in our oven today – in an entree, not a dessert! Bananas paired with chicken and curry make a luscious dinner. (Let it cook for 30 minutes instead of 20.) Goes great with rice and cooked carrots. Make sure your pan can be used on the stove and in the oven.
Marinated Tuna Steak
Tuesday, January 31st, 2012Here’s a quick and delicious take on tuna. The recipe calls for the grill, but you can sear the fish in a skillet or throw it under the broiler, either way for a few minutes on each side. Don’t overcook the tuna steaks, though, or they’ll be oh so dry. And feel free to swap that oregano for fresh ginger, if you have it. Serve with some yummy rice and steam up some broccoli or snow peas and you’re good to go!
