Teens Compete at Cooking Up Change Finals

Six teams of high school teen chefs descended on Washington, D.C., last week to determine which could concoct the tastiest healthy school lunch – for under a dollar a serving. The teens had already captured regional competitions in the national Cooking Up Change to earn them a spot to compete in the finals.

This was no mystery meat the teens created. Instead they brought their A-game: Caribbean-inspired beef rib salad with Moroccan rice, sweet potato corn bread muffins, Afro-Caribe Plancha, pulled chicken barbecue sandwich, baked sweet potato fries and yogurt-fruit parfait were all among the dishes served. When the day was done, Alexus Baldwin, Leoniqua Jackson and Denver Singletary from Jacksonville, Fla., took first.

Teens Cook Up Change for School Lunch

Who knows better than a teenager what kids want to eat for school lunch? That’s one idea behind the Cooking Up Change effort, which helps student chefs reconfigure teen favorites, in order to put a healthy spin on offerings in the cafeteria. At a Cooking Up Change contest in Jacksonville, FL, last week, six teams of culinary students from area high schools battled it out in the kitchen.

The winning dish was far from mystery meat. Instead, it featured a Caribbean-inspired beef rib salad with Moroccan rice and a sweet potato corn bread muffin on the side. Winners Alexus Baldwin, Leoniqua Jackson and Denver Singletary say they’ll keep refining their dish before heading to the national competition in May.
